1. Mexican Cheese Squares (Strict and Liberal)
1 lbs of shredded cheddar
cheese
1 cup of salsa (sugar-free)
1 1/2 tsp of chili powder
3 well beatten eggs
In small bowl, beat eggs, then add the salsa and chili
powder. Stir to well blended. Spread half of cheese in a 11x7 baking dish.
Spread
on salsa mixture. Top with remaining cheese. Bake at 350 degrees for
30 min. Cool ten minutes before cutting into squares. top
2. Smoked Salmon and
Cream Cheese Frittata (Strict and Liberal)

8 large eggs
6 tablespoons heavy cream
2 tablespoons water
dash of Splenda or non calorie sweetener)
1/4 cup chopped fresh chives
1/4 cup chopped fresh basil
1/2 tsp salt
2 teaspoons olive oil
2 oz. cold cream cheese cut into 1/2 inch pieces
3 oz thinly sliced salmon, chopped
Preheat broiler. Whisk together eggs, cream, water, sweetner, chives, basil,
pepper, and salt in a bowl. Heat oil in a 12 inch oven proof non stick
skillet (if the handle is plastic, wrap it in a double layer of aluminum
foil) over moderate heat
until hot but not smoking. Pour egg mixture into the skillet and scatter
cream cheese pieces on top. Cook, lifting up cooked eggs around the edge
with a spatula to let raw egg flow underneat, until frittata is set on
the bottom and the egg on the top is almost set, about 3 to 5
minutes. Remove from heat. Sprinkle salmon all over the fritttata
and press on the salmon lightly. Shake skillet to allow salmon to settle
into the
top. Broil frittata under the broiler until slightly puffed, and
golden, about 1 to 1 1/2 minutes. Cool for five minutes and slide onto
a plate. Cut into wedges and serve
warm or at room temperature. Hint from C: For a lunch, a slice could be
placed on a bed of fancy lettuce and served with olive oil. top
3. Easy Chili
Relleno Casserole (Strict and Liberal)
6 eggs separated
1/4 tsp salt
1 4 oz can whole Ortega Chiles, spread open
1/2 pound jack cheese
Preheat oven to 325 degrees.Beat egg whites until soft peaks form. Beat
yolks lightly until bubbly, and add salt. Fold into egg whites until
well mixed. Put 1/2 the egg mixture in a greased baking dish (8 by 8).
Stuff chiles with the cheese and place on top of the egg mix. Cover with
the other
half of the egg gmix. Bake for 30 minutes. top
